{Weekend Wrap Up}

What a great, fun packed weekend!  I can't believe how fast it went by though.  Hate how that happens.  We wait and wait for the weekend, and it goes by in a flash!

The weekend started for us at 5:00 pm on Friday.  Carl and Tyson hit GPP for THIS workout.  I wasn't able to make it there by 5:00 pm, so I hit my 5:30 Zumba class with Teresa.  It did not disappoint. I know we all came home exhausted and ready to begin the weekend.  On Saturday.  We were way too tired to begin anything on Friday night. :)

Saturday Carl and Tyson once again hit up GPP for a workout.  I was a big slacker.  I slept in.  My bad, I know.

After that, Carl and I headed out to The Gateway to do a little shopping.  While we were there, we noticed some fabulous sidewalk chalk art going on!  Loved it!

So talented!  And so fun to watch!  After doing a little shopping and getting my eyebrows threaded (which was VERY painful, by the way!), we headed out to Rocky Mountain Raceways for my brother's racing debut!  His good friend Ron Duncombe was out of town and unable to race his car this weekend, so the racing team decided to put Kevin behind the wheel.  Kevin has been working behind the scenes on many race teams over the years, so this was really a no brainer!  We had a blast, and Kevin did awesome.  Tyson went out with Kevin earlier in the day to help Kevin get ready, etc.  Tyson had a great time, and loved being  Kevin's "pit crew"!

It was seriously, so much fun!  After the races, we got to hang out in the pits and Madi and I even got to get in the race car.  Sooooo small.  We couldn't believe how tight you are tucked in there!  Pretty cool!  We had such a great time, and I was so proud of my brother Kevin!  Can't wait until his next race!

Sunday, Carl, Madi and I spent a few hours at the pool, before heading to may parents house for dinner.  Carl and I got a bit fried.  Oooops! 

After the pool, I made some carrot cake cupcakes (my dad's fave) and we headed down to Salt Lake for dinner.

All in all, a really FABULOUS weekend.  The weather was fabulous and we were able to spend time together as a family all weekend long.

{Farmers Market}

I just spent an hour typing, uploading photos and editing a post about my day at the Farmers Market last Saturday.  I hit publish and……….BAM!  Computer crashed, and my post was lost.

Really?

Yup, really.

It's now 11:00 pm, and after this workout and Zumba…I'm over it.  I can't even begin to reconstruct my post tonight. 

Oh well.

{Healthy Dinner}

Some of you know that I have been on a bit of a fitness quest for the last year.  You can read about my story HERE, but here is a photo that shows a before/after:

Anyway….along with Zumba, I started doing GPP about 3 months ago as well.  I fell in love with it.  I even recruited Tyson and Carl to join along with  me.  They are loving it as well. 

In my quest to get more fit, I have been trying to eat more fruits and veggies, AND more protein.

{Weekend Recap}

Wow!  Is it really Monday morning already?  Why do the weekend always seem to just fly by?

We had a fun weekend, but didn’t accomplish a whole lot.  Sometimes that is nice though, right?

The weekend started off on Friday evening, when Carl and I hit GPP
for THIS workout.  It was just like the name….Hard Core!  Running with a dumbbell above
your head?  Who does that?  :)  I took a much needed nap when I got home at
around 6:00 pm.  Napping on a Friday night.  Once again, who does that?  After a
week of some intense GPP workouts and Zumba, I was  more than a little exhausted.  We just chilled at home on Friday night with a little takeout from Chilis and
went to bed early.

Saturday morning Carl had a softball game and I had to pick up our basket from Bountiful Baskets.  Such yummy goodness this week!

Green apples, bananas, tomatoes, pineapple, celery, kale, romaine, apricots, plums, cucumbers, mangos, honeydew and squash.  Can’t wait to gobble all of this goodness up this
week!

 After picking up my basket, I met two of my friends at the Farmer's Market.  We had such a
great time, but it was so crowded!  It was the first weekend, and I can’t believe how many people were there!  I’m planning on doing a separate post tomorrow on some of the fun vendors and food choices!

I went to Mass on Saturday night, as a friend of mine was being honored as Woman of the Year.  I began to feel a tingle in my throat about this time, and just starting to feel a bit out of it.  Not sure what was up.  After Mass, we (Carl, Tyson and I) made THE BEST
PIZZA EVAH
.  It was delish.  By this time, I was definitely starting to feel
sick.  Who gets sick in June?  Ugh.  Early to bed for me.
Sunday was spent resting and
sleeping mostly.  Good times.  We did head down to my parents house late
afternoon to celebrate my brother’s birthday.  By that time, I was feeling much
better and ready to spend some time with the fam.  We had a great time. 
Now it’s back to the grind.

{Summer 2012 Bucket List}

Do you have a Summer Bucket List?

I was thinking about all of the things I want to do this summer, and though it would be fun to come up with a "Summer 2012 Bucket List"!

I'm thinking about running this 10k, mostly because it's a night run and looks like a lot of fun! Not too serious! I've lived in Utah my whole life and I have never hiked Mount Olympus or visited Delicate Arch in Moab, so those two items are must do's this summer!

My friend Christina has recipes for both Iced Coffee and White Sangria that I would like to give a try! They both look delish!

Our local Farmer's Market kicks off this Saturday, so I'm hoping to make multiple visits this summer!

I'm excited to see how many of these items to have crossed off by the end of the summer!

{Balboa Island}

Have you ever been to Balboa Island? We hadn't.

Each time we visit California, we always try and do something, or visit something new. On previous trips we have visited Huntington Beach, Manhattan Beach, Venice Beach and Santa Monica. We've also visited the Hollywood Bowl, Grauman's Chinese Theater, Hollywood Walk of Fame, and multiple trips to the Happiest Place on Earth. We've attend an Angel's game and even eaten at The Oinkster that was featured on Diners Drive-ins and Dives, and poolside at the Cabana Club Cafe at the Beverly Hills Hilton. We've had a great time on our visits to California.

This trip, we knew most of our time would be spent attending all of the graduation festivities. It was also a holiday weekend, so we figured the beaches would be packed on our free days of Sunday and Monday. After discussing it with the fam, we realized we just couldn't leave California without some type of visit to the beach. Plus, Uncle Kevin made Madison promise she would dip her feet in the ocean for him! T's girlfriend Stephanie is from Irvine, which is incredibly close to Balboa Island. She has spent quite a bit of time at the beach (her Dad also grew up on Balboa Island!), and suggested we spend the day there.

We did.

And we are so happy, we did.

All in all, we had such an amazing time!

We loved spending time with Stephanie and her family, and appreciate all they did to make our day on Balboa Island, such a huge success!

{I’m back!}

I'm back! From a crazy, fun trip to California to see Tyson graduate from the University of Redlands!

 

We had such a FABULOUS time!

Some highlights:

The Baccalaureate Ceremony on Friday night – watching the grads walk across the quad, to the sound of bagpipes

Watching Tyson walk across the stage as the only Chemistry Major on Saturday morning

Seeing the top of Tyson's cap decorated (the "Yellow House" is where he lives, his football #, and a shout out to Mom & Dad)

All in all, a FABULOUS trip, spent with my most favorite people ever!

{Law Day 5K recap and lack of posts}

Happy Monday, friends!

I hope you had a great weekend! I had fabulous one! More about that in a minute.

I just wanted to apologize for the lack of posts this past week. My laptop crashed (for the 2nd time!) and I'm not a big fan of our desktop computer. It's slow and is a pain in the ass to blog from. Right now it's making crazy with this post! Oh well.

That's life, right?

My posting the next week or so, will also be sparse, due to the college graduation of this boy from The University of Redlands!

I can't believe it's been 4 years already! I will have a lot to post about as soon as we return from California!

Now, on to the 5k recap!

On Saturday, I ran the 30th Annual Law Day 5k

I work for a law firm, and the firm paid for employees to run in the race. I'm not a HUGE runner, but lately I have been trying to run more and more.

I have a secret goal of running a marathon, ½ marathon and the Ragnar Wasatch Back some day, so I am trying to run some 5ks this summer!

On Friday night I "carb loaded", with the BEST PIZZA EVAH and it did not disappoint! Soooo good!

It was a beautiful day on Saturday. Perfect for getting outside and running/walking/whatever!

The race was held on the campus of the University of Utah, which is really beautiful, with view overlooking the city.

I was a bit nervous about this 5k, since the first mile of the race is mostly all uphill. I've been battling a quad pull, and was worried how it would hold up.

When the race started, I felt okay. Each step was met with a slight pull of my quad, but I was determined. The first uphill stretch was not fun. It was crowded and I knew I started out a bit too fast, going with the other racers. I ended up walking just a bit of the hill, until the course leveled out for a minute. Literally, 1 minute! Then it was back to a huge climb, toward the sun, and it was HOT! I walked up most of the hill. I tried running, but it just wasn't happening.

Once we hit the top of the course, about 1.5 miles in, things went much smoother. The course was a little flat and we weren't running straight in to the sun. At about mile 2.3 the course was more downhill than anything. That part was nice, but you can really feel downhill running in your knees and my quad was really bothering me the last mile. Knowing that Carl and Madison would be waiting for me at the finish line was a huge motivator!
I told Carl I would probably cross the finish line somewhere around 40-45 minutes due the uphill parts of the course slowing me down. I checked my watch to try and gauge how I was doing on time, and it seems to me I was hitting the 40 minute mark with at least .5 miles to go.

I was annoyed.

But I kept on going.

Finally, the finish line was within in sight! All the people along the race route were cheering on the runners and that makes it sooo much easier to keep going! Right before the finish line I spotted Carl and Madison. Carl had my cell phone out ready to snap a picture! I gave him my cheesy smile:

And then I crossed the finish line:

My "official" time was: 36:04.25 I was 11/21 in my age group and finished 252/594

Not too bad.

I'll take it!

It really was fun, and I felt like I could have gone another couple of miles!

The rest of the weekend consisted of dinner out with Carl's family on Saturday night, which was fun!

Sunday was a day of addressing my brother's wedding invitations in calligraphy! I can't wait for his wedding in July!

{Mother’s Day 2012}

Happy Monday y'all! I can't believe how fast May is flying by! I swear, we were just celebrating the New Year, right?

I had a FABULOUS Mother's Day yesterday. The whole weekend was just plain great!

The weather in Utah was just gorgeous! Loved it!

My brother and his finance hosted our family and her family for dinner and a Mother's Day Celebration yesterday.

We grilled Whole Foods burgers, which were so good. I'm going to have to pick some up soon!

I was in charge of bringing dessert. I'm on a cupcake kick right now, so I whipped up some Brownie Cupcakes

Quick, easy and delicious!

I was treated like a queen by Carl (and Chloe!) all day long, and I got a super nice text messages from Tyson and Madison as well!

Madison totally surprised me with these BEAUTIFUL tropical flowers and the sweetest card ever. Made my cry!

Carl and I finished off the night watching the Season Finale of Survivor. Do you watch? If so, what did you think?

All in all, it was a really a nice weekend!
