So……..did you have a great Valentines Day? Romantic dinner? Movie night? Delivering Valentines to friends and family with the kids? Whatever you did, I hope it was great! We spent time at home together, and then Carl went to the gym for his racquetball league, and I went to Zumba! Then we met back up at home to spend more time together! It’s the first year with no kids at home……so weird! But, we had a great night regardless!
A few weeks ago (has it really been that long?) we were invited to a Super Bowl party with some friends. Now, if you know me at all (who’s even reading this blog? Is there anyone really out there?)….then you know I absolutely LOVE appetizers. Love them. Like, I can graze on apps all night long and give up an entrée and dessert for more apps! Love everything about them. I decided to take two different appetizers to the party. A “bad” (i.e. fattening) appetizer and a “good” (i.e. healthy) appetizer! Nice, huh?

Okay, so I have rambled and rambled long enough. Here they are:
O.M.G. Seriously…..both of them were delish! The Caprese Skewers were so light and crisp! The basil added the perfect blend of flavors with the tomatoes and mozzarella….drizzles with the warm balsamic vinegar!! And the Sideline Smokies? Oh my. A little bit of pure pork heaven is what they are. Seriously……soooooo good, and soooooo bad for you. But they kinda cancel each other out, right? Yeah, I know…..they don’t. But, a girl can hope, right?

How FABULOUS does this salad look? Something very similar to this, was my lunch today! Oh my, DELISH! I made it for dinner last night, and brought the leftovers to work with me today! I didn't have a recipe, so I just winged it!
One bag of mixed greens (mine had carrots, snap peas and radishe)
Fresh Strawberries, cut into halves (or quarters, whatever you prefer)
Can of pineapple chunks (or fresh pineapple)
Can of Mandarin Oranges
Toasted almond slivers
Mix the above ingredients together and top with creamy poppyseed dressing!
SOOOOOOO good and fresh!

My daughter has 2 days (and a few hours!) of school left, before she graduates. Oh my! I cannot believe my baby is done with high school! I am freaking out, just a bit!
So, I cooked my very first turkey on Sunday. My very first. I'm thirty forty some odd years old, and I have NEVER cooked a turkey before. Kinda crazy, huh? We always go to my mom's house for Thanksgiving, and she is superwoman, and cooks every year. She always cooks a fabulous spread and does it all herself. Hard to live up to that!
Carl got a turkey Christmas bonus this year, and with college boy home for the holidays on Friday night, I decided to have my whole family up for dinner on Sunday and cook my very first turkey. What? Invite the fam over for my first try at a turkey? Yup, crazy. BUT, it was fine. Really easier than I expected. I'm not sure how it tasted, but hey…..I cooked it right?!?!?!? And with all the drama of the flood and the house being torn up…..it was a nice diversion. I think I may cook one again soon…..well, maybe next year when Carl gets his turkey bonus ;)
